Bacon, potatoes, and eggs with black bean and corn salsa, green onions, and cilantro. This breakfast skillet doubles as a scrumptious dinner, too!
Serve as-is, with tortillas, or as a flavorful breakfast enchilada or burrito filling.

I find myself loving Mexican and Tex-Mex food more and more these days.
They just have so much flavor! They don’t have to be spicy, although I love a little kick of heat most of the time.
I particularly like this dish because, although I rarely eat breakfast (I know, most important meal of the day, yada yada) I love breakfast food for lunch or dinner.
So this Tex-Mex Breakfast Skillet is actually going to be tonight’s dinner!
First we’re going to microwave the potato for a few minutes. This gives it a head start and allows it to cook quicker in the skillet.
And, fyi, I don’t always peel the potato but this one had a kind of gnarly skin. Do it however you like best.
So…cut the potato in about a 1/2 inch dice…
…and put it in a microwave safe bowl. Cover it and blast it on high for 2 minutes, stir it and cook another 2 minutes.
Dump it out on some paper towels and blot any excess moisture.
Next, cut the bacon in about 1/4 inch dice. Cook it until crispy and remove it to some paper towel. It could even be the same ones your potatoes are on.
Discard all but about a tablespoon of the bacon drippings from the pan.
Next, toss in the potatoes back in and cook them until they’re tender. Don’t mess with them too much or they won’t brown nicely.
Beat the eggs and pour them in the skillet right over the potatoes.
Sprinkle the cooked bacon over the top along with the cilatro.
Gently stir it around until you get large curds and it’s just set with no liquid. Don’t over cook it.
Finally, stir in the black bean salsa.
Sprinkle on the cheese and green onions.
If you’re feeling adventurous, serve it with a few dashes of hot sauce!
Serve this breakfast skillet straight out of the pan, with some tortillas, or as an enchilada filling. It’s so versatile!
