Tender and cakey melt-in-your-mouth strawberry cookies topped with milk chocolate and dark chocolate hearts! Made super easy with a cake mix!

Ok, so…full disclosure.
As some of you who follow my blog know from previous posts, I’m allergic to strawberries.
So I’d like to thank my family for taste-testing these for me. I know it’s a rotten job but I always know I can count on them for honest feedback.
And so…on with the recipe.
Cake mix cookies are my absolute favorite cookies to bake!
I love the texture, I love how easy they are, and most of all, I love how yummy they are!
These cookies have cream cheese in them to make them melt in your mouth.
Start by beating the cream cheese and butter together. I cut them into chunks to help them soften quicker. It also helps them to incorporate easier.
Beat these until they’re light and fluffy. Scrape down the sides and add the egg and vanilla.
Beat until smooth and add the cake mix. Beat until it’s well combined, scraping the sides as needed.
Just look at that pretty pink color!
Now pop the dough in the fridge for 1/2 an hour. It makes it much easier to scoop.
Bake your strawberry cookies for 13-15 minutes or until the edges are light brown.
Then immediately press a chocolate heart into the center. It helps to have all of the hearts unwrapped and ready to go.
Press hard enough for the heart to imbed in the dough but not so hard that the dough splits. I use a spoon handle to press them so I don’t get a nasty finger print on the chocolate.
You can see here where a couple split. They still taste yummy, they just don’t look quite as nice.
The chocolate hearts will melt a little so make sure to cool the cookies until the hearts set again.
