This cornbread is quick and easy to make with everyone’s favorite cornbread mix.

This cornbread is soooo full of flavors; spicy green chilies, two chili powders, and a gooey four-cheese blend. Because, why settle for one or two cheeses when you can have four?
How perfect would a big fat chunk of this be with my Slow Cooker Chicken Enchilada Soup?! Or with a ladle of your favorite chili over the top. Or with taco meat and all the fixins like I’m doing here today.
And you just can’t believe how easy it is to put together.
Start by beating the eggs in a large mixing bowl.
Then, stir in the rest of the ingredients. Mix it so everything is well combined.
Pour the batter into your pan and smooth out the top.
Bake it for around 45 minutes or until lightly browned.
So. Insanely. Easy.
I made a meal of it by piling on some taco meat and my favorite toppings.
Tomorrow I’m having a piece with some salsa and an egg on top. I can’t wait!
