No smoker needed to cook this spicey brisket to tender perfection! Chipotle peppers and smoked paprika give it just the right amount of heat and smokiness.
This melt-in-your-mouth brisket is fantastic with your favorite sides, in a tortilla, or on a bun.

So…I don’t grill. And I don’t have a smoker. Even if I did, I really don’t think I would want to be running in and out of the house in this heat to babysit a chunk of beef.
That’s why I love this slow cooker brisket so much!
It cooks all day on a bed of onions for the perfect set it and forget it kind of situation.
The smoky flavor comes from the chipotles, which are smoked jalapeños, and smoked paprika.
Cumin and honey join in to really kick up the flavor.
Start by spraying your slow cooker with some cooking spray. Then slice the onions and pour in the beef broth.
Next, in a small bowl combine the chipotles, adobo sauce (from the can of chipotles), olive oil, honey, cumin, salt, and paprika.
Then place the brisket on top of the onions and spread the chipotle mixture on top.
Cover and cook the brisket on low until it’s tender, about 8 hours.
When it’s cooked, slice or shred it and return it to the slow cooker and toss it with the onions and broth.
Serve your brisket with your favorite sides like corn on the cob, Smoky Bacon and Brown Sugar Slow Cooker Baked Beans, Creamy 3-Ingredient Cole Slaw, or Easy One Pot Bacon Mac and Cheese.
Or try it in a tortilla or on a bun.

- 2 medium onions. sliced
- 1/2 cups beef broth
- 2-3 pounds beef brisket
- 3 chipotle peppers packed in adobo, minced fine
- 1 tablespoon adobo sauce (from can of chipotles)
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 teaspoons ground cumin
- 2 teaspoons salt
- 1 teaspoon smoked paprika

- Spray slow cooker with cooking spray. Place onions in bottom and pour beef broth over the top.
- In a small bowl combine chipotles, adobo, olive oil, honey, cumin, salt, and paprika. Place brisket on top of onions; spread chipotle mixture on top. Cover and cook until brisket is tender, about 8 hours.
- Remove brisket and slice or shred. Return to slow cooker and toss with onions and beef broth.
Oh I don’t grill either. We even don’t have a grill (yet). There’s a thing, though. I don’t have a slow cooker either 🙂 So for now, I’m just going to enjoy these pictures which are so good. This brisket looks and sounds perfect. Certainly, I wouldn’t mind having some right now.

I fancy myself a “brisket connoisseur” and I love that slow smoked taste you find in BBQ shacks everywhere, especially Texas. But, this is brisket on an entirely different level! Nice and tender and the flavor and heat from all the seasoning is just fantastic! I gobbled down multiple slices… and I didn’t even have to light my grill! 😊👍🏼
