An easy vegetarian dish with tender 3-cheese tortellini and fresh baby spinach in a creamy mushroom and onion sauce.
Carnivores in your life? Not to worry, you can substitute meat tortellini and chicken broth.

I don’t always eat vegetarian. But when I do it has to be more than a bowlful of seeds and weeds.
There has to be cheese involved and this dish has plenty! Three cheese tortellini, a creamy sauce, AND a sprinkling of Parmesan at the end!
And of course there needs to be mushrooms. My food crush for mushrooms is approaching epic proportions!
I try to sneak them in whenever and wherever I can. Much to Hubby’s dismay.
This recipe starts by cooking the mushrooms and onions for a loooong time.
Could you do this on the stove? Sure! But you would really have to babysit it and it would be a lot more work.
Here we basically have a set it and forget it situation. At least for the first 7 or 8 hours.
So start by spraying your slow cooker with cooking spray.
Then add the mushrooms, onions, butter, salt, veggie broth, and garlic and herb seasoning. I used Mrs. Dash.
And definitely don’t almost forget the melted butter and not get a picture of it going in. Because I certainly would never do that.
Pop on the lid and cook it on low for 7-8 hours or until the mushrooms and onions are super tender.
Next, stir in the tortellini and cream cheese. Make sure you use the refrigerated tortellini, frozen won’t work for this recipe.
I found a nice 3-cheese tortellini in the deli department of my Walmart. Fyi, they have different flavors if cheese isn’t your thing or you just want some variety.
Put the lid back on and let it cook 30 minutes or until the tortellini are tender. Stir it once halfway through.
Finally, stir in the spinach. Lightly pack it when you measure it. Replace the lid and let it stand for 5 minutes.
Just look how creamy that sauce is!
Then sprinkle on the Parmesan cheese and parsley. I’ll look the other way if you want a little extra cheese.
