Hubby loves Asian food. But he’s always been the one that cooks it.
Today I’m dipping my toe in the water with this Slow Cooker Beef and Broccoli
It’s honestly one of the easiest recipes you could ever want. But just because it’s easy doesn’t mean it isn’t loaded with flavor!
There’s not a whole lot of prep, just slicing some beef and chopping a little garlic. You can even cheat on the garlic by buying the jarred that’s already chopped.
Otherwise it’s pretty much a dump-and-go situation.
Start by spraying your slow cooker with some cooking spray. This recipe has some brown sugar in it and you probably don’t want that sticking.
Then slice up your beef. I found a beautiful Angus sirloin to use. If that’s not in your budget a thinner chuck roast or even flank steak will work but you may need to cook it longer.
Slice the beef in about 1/4 inch slices. A really sharp knife is your best friend here.
Put the beef in the slow cooker.
Then add 1 cup of the beef broth, the soy sauce, brown sugar, sesame oil, ginger, and garlic to your slow cooker and stir it all to coat the beef.
Cover and cook on low for 5 hours or until the beef is tender.
Then increase the heat to high. Stir together the cornstarch and remaining 1/4 cup of beef broth and pour it over the beef.
Add the broccoli and give everything a good stir to get it all coated in the sauce.
Pop the lid back on and cook your beef and broccoli for another 30 minutes or until the broccoli is tender and that yummy sauce is thickened.
I like mine sprinkled with some toasted sesame seeds and served with some brown rice.
