This scrumptious Sausage, White Bean, & Spinach Soup is packed with healthy ingredients like turkey sausage, creamy cannellini beans, and fresh baby spinach!

It’s all about balance people!
And this soup has tons of flavor and good-for-you ingredients!
It starts with turkey Italian sausage.
First, heat some olive oil in a large dutch oven over medium-high heat. Then add the sausage and cook it until it’s no longer pink.
Remove it from the pan and set it aside.
Next, add the onions, garlic, and oregano to the pot and cook about them 5 minutes until the onions are softened.
Return the sausage to the pot and stir in the tomatoes, beans, and chicken broth.
Bring this all to a boil and stir in spinach.
I know it looks like a lot, but trust me, it cooks down fast.
See? Here it is just a couple of minutes later.
Reduce the heat to low and simmer your soup for 5-10 minutes or until the spinach is wilted.
A sprinkle of Parmesan cheese is the perfect finishing touch!
