Gooey rocky road brownies covered in chocolate chips, peanuts, and mini marshmallows. You won’t believe how quick and easy these guys are to whip up!
Starts with a box of your favorite brownie mix. Easy peasy!

I’ve been craving something gooey and chocolatey lately so…Rocky Road Brownies. Fudgy brownies topped with gooey marshmallows. Throw on some chopped peanuts and extra chocolate for good measure!
Plus, the Super Bowl is just days away and brownies seem to be the unofficial dessert of football. And these brownies couldn’t be easier.
Start by prepping the pan. I like to line mine with a parchment sheet turned sideways. It makes getting the brownies out of the pan a whole lot easier.
Spray the bottom of a 9″ x 13″ pan with baking spray, lay down the parchment, then spray again. The first spray “glues” the parchment a bit so it doesn’t slip around when you’re spreading the batter.
Next, mix up your brownie according to the instructions on the box. I chose a triple chocolate chunk brownie mix by Betty Crocker because extra chocolate always seems like a great idea!
Spread the batter in the pan.
Bake your brownies according to the instructions on the box. Don’t let them cool.
As soon as they’re out of the oven throw on the marshmallows…
…and place a cookie sheet over the top for 5 minutes to soften the marshmallows.
Once the marshmallows are softened, add the peanuts and chocolate chips.
Let the brownies cool completely then lift them out of the pan by the parchment.
Spray a sharp knife with cooking spray. Cut into rows of 4×6 rows to get 24 brownies. Wipe the knife clean and respray as necessary.
Try it a la mode! Heat a brownie in the microwave for 30 seconds. Top with a scoop of ice cream and a drizzle of chocolate sauce.
