Slow Cooker Pot Roast
Tender pot roast slow cooked in a beefy onion mushroom sauce with potatoes, carrots, celery, and mushrooms and seasoned with thyme.

  • 3pounds baby new potatoes
  • 1pound carrots; peeled, cut into large pieces
  • 2stalks celery, sliced
  • 8ounces baby bella (cremini) mushrooms, quartered
  • 2tablespoons olive or canola oil
  • 12-3 pound beef roast
  • 1can golden mushroom soup, undiluted
  • 1recipe DIY Homemade Onion Soup Mix(or 1 packet onion soup mix)
  • 1teaspoon dried thyme
  • 1cup beef broth
  1. Place all of the vegetables in the bottom of the slow cooker; stir to combine.
  2. In a large skillet over medium high heat brown for about 5 minutes on each side; place in slow cooker on top of vegetables.
  3. In a small bowl whisk together soup, soup mix, thyme, and beef stock; pour over roast.
  4. Cover and cook on high for 6-7 hours.
