Slow Cooker Chicken Cacciatore and Spaghetti
Chicken Cacciatore with juicy chicken thighs cooked in a flavorful sauce. Don’t worry about dirtying another pot, the spaghetti cooks right in the slow cooker with the chicken!

  • 1(28 ounce) can crushed tomatoes
  • 1(4 ounce) can tomato paste
  • 2cups chicken broth
  • 1/2cup water
  • 1tablespoon Italian seasoning
  • 1/2teaspoon red pepper flakes(optional)
  • 4cloves garlic, minced
  • 1medium green pepper, chopped
  • 1medium onion; chopped
  • 1(8 ounce) container) sliced mushrooms
  • 3pounds boneless skinless chicken thighs(about 7 or 8 thighs)
  • 2tablespoons olive oil
  • 1(16 ounce) package spaghetti, broken in half
  • Parmesan cheese
  • fresh basil
  1. Spray slow cooker with cooking spray or use a liner. Add first 10 ingredients (through mushrooms) and stir well. Add chicken thighs and cover with sauce.
  2. Cook on low 6 hours or until chicken is cooked through. Remove chicken, cut into bite sized pieces, and return to slow cooker.
  3. Add olive oil and spaghetti (broken in half) and stir. Cover, increase heat to high, and cook 20-30 minutes or until spaghetti is cooked through. Serve with Parmesan cheese and fresh basil.
