Slow Cooker Beef Stroganoff
This fork tender beef stroganoff is made with mascarpone and greek yogurt for extra creaminess. Baby Bella mushrooms give it a deep earthy flavor!
beef stew meat
(10.75 ounce) can
beefy mushroom soup, undiluted
sliced baby bella (cremini) mushrooms
plain Greek yogurt
hot cooked noodles or rice
In large skillet, over medium-high heat, cook stew meat, onion, garlic, salt, and pepper in oil; cook 7 to 9 minutes or until beef is browned.
Add mix beef mixture, soup and mushrooms to slow cooker; stir well to combine.
Cover and cook on low 5-6 hours or until beef is tender.
Stir in mascarpone until melted. Stir in greek yogurt until well combined. Serve over noodles or rice.
