Slow Cooker Beef Stroganoff
This fork tender beef stroganoff is made with mascarpone and greek yogurt for extra creaminess. Baby Bella mushrooms give it a deep earthy flavor!

    • 2pounds beef stew meat
    • 1cup chopped onion
    • 2cloves garlic, minced
    • 1/2teaspoon salt
    • 1/4teaspoon pepper
    • 1(10.75 ounce) can beefy mushroom soup, undiluted
    • 8ounces sliced baby bella (cremini) mushrooms
    • 4ounces mascarpone
    • 1cup plain Greek yogurt
    • hot cooked noodles or rice
    1. In large skillet, over medium-high heat, cook stew meat, onion, garlic, salt, and pepper in oil; cook 7 to 9 minutes or until beef is browned.
    2. Add mix beef mixture, soup and mushrooms to slow cooker; stir well to combine.
    3. Cover and cook on low 5-6 hours or until beef is tender.
    4. Stir in mascarpone until melted. Stir in greek yogurt until well combined. Serve over noodles or rice.
