Ingredients
  • 1pound turkey italian sausage
  • 2medium onions, chopped
  • 3cloves garlic, minced
  • 1teaspoon dried oregano
  • 2(14.5 ounce) cans fire roasted diced tomatoes, undrained
  • 2(19 ounce) cans cannellini beans, rinsed and drained
  • 32ounces (4 cups) chicken broth
  • 1(6 ounce) bag baby spinach
  • grated Parmesan cheese
Instructions
  1. In a large dutch oven, heat olive oil over medium-high heat; add sausage. Cook 5-7 minutes or until no longer pink; remove and set aside.
  2. Add onions, garlic, and oregano and cook about 5 minutes until onion is softened. Return sausage to pot and stir in tomatoes, beans, and chicken broth. Bring to a boil and stir in spinach. Reduce heat to low and simmer 5-10 minutes or until spinach is wilted. Serve with cheese.
