Restaurant-Style Chipotle Salsa
Restaurant-style salsa flavored with lime, cilantro, and a serious kick of chipotle. A spicy, party-sized batch just in time for Cinco de Mayo.

    Ingredients
    • 2(10 ounce) cans Rotel(diced tomatoes with green chiles)
    • 1cup fresh cilantro
    • 1/2cup chopped onion
    • 3cloves garlic, chopped
    • 2 chipotle peppers packed in adobo
    • 1(28 ounce) can diced tomatoes
    • 1teaspoon ground cumin
    • 1/2teaspoon salt
    • 2whole limes, juiced
    Instructions
    1. Place Rotel, cilantro, onion, garlic, and peppers in food processor. Pulse 10-15 times until desired consistency. Transfer to large mixing bowl.
    2. Place diced tomatoes, cumin, salt, and lime juice in food processor. Pulse 2-5 times. Add to Rotel mixture.
    3. Refrigerate 30 minutes-1 hour before serving.

    All of the ingredients (except the canned tomatoes) can be adjusted to suit your own personal taste.
