Minestrone with Turkey Italian Sausage
This hearty minestrone is low in fat, high in fiber, and loaded with good for you ingredients like zucchini, beans, spinach, and turkey sausage. And it’s packed with flavor!

  • 1(19.2 ounce) package turkey italian sausage
  • 1cup chopped onion
  • 1cup diced carrots
  • 1cup diced celery
  • 3cloves garlic, chopped fine
  • 2teaspoons Italian seasoning
  • 1(15.5 ounce) can red kidney beans
  • 1(15.5 ounce) can canelli or great northern beans
  • 1(14.5 ounce) can diced tomatoes, undrained
  • 1small zucchini, diced
  • 1small yellow squash, diced
  • 6cups beef broth
  • 2cups water
  • 1cup frozen chopped spinach
  • 1cup small pasta shells
  • salt to taste
  1. In a large dutch oven over medium high heat, brown turkey sausage until no longer pink. About 5-7 minutes. Remove to bowl with slotted spoon and set aside.
  2. Add onions, carrots, and celery to pot. Cook until vegetable are softened, stirring occasionally, about 5 minutes. Add sausage back to pot along with remaining ingredients EXCEPT spinach and pasta shells.
  3. Bring to a boil and reduce heat to simmer. Simmer, stirring occasionally, until vegetables are tender, about 15 minutes. Add pasta and spinach and cook until al dente, about 10 minutes more. Add salt to taste.
