Meaty 3-Bean Chili
Sausage, lean ground beef, and lots of beans make this meaty 3-bean chili super hearty. Chipotle chili, cumin, onions, and green pepper make it extra flavorful.

  • 1 pound pork sausage
  • 1pound lean ground beef
  • 1large onion; chopped
  • 1medium green pepper, chopped
  • 3cloves minced garlic
  • 3tablespoons chili powder
  • 1/4teaspoon ground chipotle chili(or cayenne pepper)
  • 1teaspoon ground cumin
  • 1(12 ounce) bottle dark beer
  • 1(28 ounce) can crushed tomatoes
  • 2tablespoons tomato paste
  • 1(15 ounce) can black beans, rinsed and drained
  • 1(16 ounce) can red beans, rinsed and drained
  • 1(15.5 ounce) can cannellini beans, rinsed and drained
  • 1 1/2cups corn
  • salt to taste
  1. In a large dutch oven over medium high heat, brown sausage and beef, stirring constantly, until no longer pink, 5-7 minutes. Drain if necessary and return to pot. Add onion, green pepper, garlic, chili powder, chipotle powder, and cumin. Cook additional 5 minutes, stirring occasionally, or until onion is softened.
  2. Add beer, tomatoes, and tomato paste. Simmer uncovered, stirring occasionally, 10-15 minutes. Stir in beans and corn, cook until heated through, about 5 minutes. Add salt to taste.
Recipe Notes

Substitute 1 1/2 cups beef broth or water for beer.
