Loaded Baked Potato Soup
Potato soup loaded up with all of your favorites! Bacon, cheese, sour cream, and green onions. Just like a loaded baked potato in a warm bowl of comfort.

  • 12ounces thick cut bacon
  • 2pounds baking potatoes(about 5 medium or 4 large)
  • 1/2cup (1 stick) butter
  • 1/4cup bacon fat
  • 3/4cup all purpose flour
  • 4cups (1 32 ounce carton) chicken broth
  • 4cups whole milk
  • 1teaspoon salt
  • 1teaspoon ground black pepper
  • 8ounces sour cream
  • 2 1/2cups shredded extra sharp cheddar cheese, divided
  • 3/4cup sliced green onions, divided
  • 1tablespoon onion powder
  1. Pierce potatoes 4-5 times on each side. Place on microwave safe plate. Cook on high power for 6 minutes; flip over an cook an additonal 6 minutes. Let stand in microwave.
  2. While the potatoes are cooking, cut the bacon into 1/2 inch pieces and cook over medium high heat until crispy. Remove to paper towels. Remove all but 1/4 cup of the drippings.
  3. In the same pot, melt butter and bacon fat together; whisk in flour. Cook 2 minutes, whisking occasionally. Slowly pour in the chicken broth, whisking constantly. Stir in the milk, salt and pepper; stirring constantly until mixture is thickened.
  4. Cut potatoes in half; scoop potato potato out of skins and into pot. Stir in half of the bacon, the sour cream, 2 cups of the cheese, onion powder, and 1/2 cup of the green onions. Top the individual servings with the remaining bacon, cheese, and green onions.
Recipe Notes

Since microwaves can vary greatly, cooking time for potatoes may need to be adjusted.
