Healthy Banana Nut Bread
This banana nut bread is made with healthy whole wheat and is oil & refined sugar free! And nuts give it a boost of fiber and a wonderfully crunchy texture!

Ingredients
  • 1/3cup unsweetened applesauce
  • 1/2cup honey or maple syrup
  • 2large eggs, lightly beaten
  • 1/4cup milk
  • 1teaspoon pure vanilla
  • 1cup mashed very ripe banana(about 2 large, 3 medium)
  • 1 3/4cup whole wheat flour
  • 1teaspoon baking soda
  • 1/4teaspoon salt
  • 1/2teaspoon cinnamon
  • 3/4cup chopped pecans or walnuts, divided
Instructions
  1. Preheat oven to 325°. Spray 9×5 inch loaf pan with baking spray.
  2. In a large bowl, beat together apple sauce, honey, eggs, milk, and vanilla. Stir in bananas.
  3. In a separate bowl whisk together dry ingredients; flour, baking soda, salt, and cinnamon.
  4. Gently stir dry ingredients into banana mixture until just combined. Stir in 1/2 cup pecans. Pour batter into prepared loaf pan, sprinkle top with remaining pecans.
  5. Bake for 55-60 minutes or until a toothpick inserted into the middle comes out clean. Cool in pan for 10 minutes then move to wire rack to cool completely. Store tightly wrapped in refrigerator for up to 1 week.
