Cranberry-Pistachio White Chocolate Fudge

Ingredients
  • 2(12 ounce) bags premium white chocolate chips
  • 1(14 ounce) can sweetened condensed milk(such as Eagle Brand)
  • 1 1/2teaspoons pure vanilla
  • 1/2cup dried cranberries, divided(such as Craisins)
  • 1/2cup salted pistachios, shelled, roughly chopped, divided
Instructions
  1. Line an 8×8 or 9×9 inch pan with parchment or waxed paper, leaving an extra 2-3 inches hanging over the sides.
  2. Melt the chocolate with the sweetened condensed milk over low heat until they’re well combined and smooth. Remove from heat; stir in 1/4 cup of the cranberries, 1/4 cup of the pistachios, and the vanilla. Spread into prepared pan and smooth the top. Sprinkle with remaining cranberries and pistachios. Lightly press into fudge.
  3. Chill for 2 hours or until firm. Lift out of pan with parchment. Cut into 8 rows by 8 rows to get 64 pieces.
Recipe Notes

You can get pistachios that have already been shelled but they cost quite a bit more. If you’re shelling them yourself, it can take a while. Be sure to leave yourself time or do them ahead.

Substitute chopped, dried cherries for the cranberries.
