Christmas Confetti Cake Mix Cookies

Ingredients
  • 1(8 ounce) package cream cheese, softened
  • 1/2cup (1 stick) butter, softened
  • 1large egg
  • 2teaspoons pure vanilla
  • 1boxed white cake mix(such as Betty Crocker Supermoist)
  • 1/4cup holiday sprinkles
  • 1container white frosting(such as Betty Crocker Rich & Creamy vanilla)
  • holiday decorations(sprinkles, colored sugars, etc.)
Instructions
  1. Preheat oven to 350┬░. Line cookie sheets with parchment.
  2. In large bowl, beat cream cheese and softened butter with a mixer on medium speed about 1 minute or until well blended; scrape down the bowl. Beat in egg and vanilla until smooth. Beat in cake mix on low speed until blended. Beat in 1/4 cup sprinkles. Cover and refrigerate 30 minutes.
  3. Drop dough by cookie scoop on to parchment lined cookie sheets. Bake 13 to 15 minutes or until edges are light golden brown. Cool on cookie sheet 2 minutes; remove to cooling rack. Cool completely, about 20 minutes.
  4. Using an offset spatula or knife, spread about 1 tablespoon frosting on cookie, and immediately top with sprinkles. Repeat with remaining cookies. Let frosting set; store in airtight container at room temperature.
