Bacon Garlic Roasted Brussels Sprouts
Not your mama's Brussels sprouts! Lightly sautéed in bacon fat, roasted with garlic and shallots. Topped with crispy, crumbled bacon!
ounces (about 12 slices)
thick cut bacon
Brussels sprouts, trimmed and halved
salt to taste
Preheat oven to 450°. Line sheet pan with foil.
Cut off bottom of sprouts and cut in half; set aside.
In a large skillet over medium high heat, cook bacon until crispy. Remove and drain on paper towels. Reserve all but 2 tablespoons of bacon fat to a small heat safe bowl.
In the same skillet, add Brussels sprouts. Sauté for 3-5 minutes or until sprouts are lightly browned.
Add sliced shallot and garic powder. Toss to combine. Add additional 1-2 tablespoons reserved bacon fat, if necessary. Toss again.
Pour sprouts into single layer on prepared sheet pan. Roast uncovered for 20 minutes, stirring halfway through, or until sprouts are browned and tender.
Crumble reserved bacon and add to sprouts. Toss to combine. Add salt to taste.
