Just like eating pumpkin pie for breakfast! In about 5 minutes you can have all of the flavors of pumpkin pie in a warm, healthy bowl of oats.
In around the time it takes to heat something frozen in the microwave you can have this hot, spiced oatmeal.

This recipe uses my Homemade Pumpkin Pie Spice. You can buy pumpkin pie spice at the store, but you probably have everything you need to make it.
Oatmeal is one of Hubby’s favorites, especially in cooler weather. I thought this spiced up bowl of hot oats would be a nice break from his usual steel-cut oats. He was more than happy to taste-test for me.
He liked it so much that he had it for breakfast the next day, too.
This oatmeal recipe is one of the easiest you’ll ever make. In fact, it’s practically instant!
Start by bringing the milk to a simmer. It doesn’t need to boil, just heat it until it gets a ring of bubbles around the edge. This is also called “scalding”. Now you know.
Stir in the oats and the pumpkin. Turn the heat down to low and let it simmer for a minute, stirring occasionally. Be careful. If it pops and gets on you it’s like lava!
It will thicken as it cooks.
Finally, remove it from the heat and stir in the brown sugar, butter, pumpkin pie spice, and salt.
This recipe makes about 2 1-cup servings or 4 1/2-cup servings. Or 1 really big serving, it just depends on how hungry you are. Top your oatmeal with chopped pecans, walnuts, pumpkin seeds, sunflower seeds, or whatever else you think might be yummy.
If you have leftovers, add some milk or water when you reheat it as it thickens quite a bit as it sits.
