This hearty minestrone is low in fat, high in fiber, and loaded with good for you ingredients like zucchini, beans, spinach, and turkey sausage. And it’s packed with flavor!

My favorite way to get back on track is a big bowl of warm, healthy soup. But I’m not a fan of canned soups, even the fancy ones.
Ok, I’m not opposed to the occasional chicken and noodle when I’m under the weather (and it better come from a red and white can), but for the most part I much prefer homemade soups.
This minestrone has the addition of Italian sausage. Traditional minestrone recipes usually don’t contain meat, but it helps the soup hang with you longer.
My favorite Italian sausage is this turkey sausage by Honeysuckle White. It’s low in fat but high in flavor. I love it so much that I often use it in place of regular italian sausage in my Slow Cooker 3-Meat Pasta Sauce.
Start by heating a little olive oil in a dutch oven over medium high heat. The turkey sausage doesn’t have enough fat on it’s own so some healthy fat is in order to keep it from sticking.
The olive oil also gives it some nice flavor.
Cook it until it’s no longer pink and remove it with a slotted spoon to a bowl.
Add the onion, carrots, celery (mirepoix, in french cooking), garlic, and italian seasoning, and cook until the veggies are softened.
Add the remaining ingredients EXCEPT the spinach and pasta shells.
Don’t forget the sausage.
Bring the soup to a boil and reduce the heat to a simmer. Simmer, stirring occasionally, until the vegetables are tender.
Stir in the pasta and spinach and cook until the pasta is al dente. Add some salt to taste.
Just look at all those glorious veggies!
