Sausage, lean ground beef, and lots of beans make this meaty 3-bean chili super hearty. Chipotle chili, cumin, onions, and green pepper make it extra flavorful.
And that bottle of beer. That sends it over the top.

So the other day it got in the low 80’s and we broke the record high temperature. Then yesterday we had freezing rain.

So as long as Winter is determined to stubbornly hang around, I’m hanging on to my comfort food.
This chili is so hearty, and the assortment of beans make it somewhat healthier than most comfort foods.
I added a smidge of ground chipotle chili powder to spice it up a bit. You can substitute cayenne. Or leave it out completely if you like a milder chili.
Start by browning the sausage and ground beef in a large dutch oven. Cook it until it’s no longer pink. Drain it if you need to and return it to the pot. Then add the add the onion, green pepper, garlic, and spices.
Stir it around and cook it until the onion softens, about 5 minutes. Then stir in the tomatoes, tomato paste, and beer. If you’re not into beer you can substitute 1 1/2 cups beef broth or water. Simmer it for 10-15 minutes.
Give the beans a good rinse. Just throw them all in a sieve or colander.
And throw them in the pot with the corn.
Simmer it for about 5 minutes or until everything is heated through. Add salt to taste. I like this meaty 3-bean chili with cheese and oyster crackers (seen above).
