Apples, apple pie spice, and maple in perfect sized whole wheat snack bars. Top with chopped pecans and a sweet maple drizzle for the win!
These super moist made-from-scratch cakey bars are just the right size if you just want a nibble of something sweet!

I’ll just go ahead and say it…we’re dessert hounds around here. Especially anything baked.
But since it’s just Hubby and me most of the time, I don’t always want a bunch of it hanging around and tempting us.
So these cakey little snack bars are perfect for when you’re craving some sweet.
And I will bet money that Hubby may even have 1 or 2 for breakfast at some point. It’s fruit, after all. That makes it healthy, right?
Actually, these snack bars are healthier than some. They’re made with whole wheat, and partially sweetened with maple syrup.
For these snack bars I’m using two types of apples, Granny Smith and Honey Crisp. The combination of the tart with the sweet provides a complexity that I just love!
Other apples that hold up well during baking are Braeburn, Fuji, and Gala. If you have another favorite that you often use, by all means use that.
My homemade Apple Pie Spice can be found here or you can use store bought.
Start by spraying the pan with baking spray. Pam for Baking and Baker’s Joy are my favs. Or you can line it with parchment like I did here.
In a medium bowl whisk together the flour, apple pie spice, baking powder, and salt.
In another medium bowl stir together the brown sugar, maple syrup, melted butter, egg, and vanilla.
Stir in the flour mixture until it’s just combined.
Then chop the apples…
…and fold them into the batter.
Spread the batter in the prepared pan. It will be very thick with lots of apples. Sprinkle the pecans over the top.
Bake 20-25 minutes or until a toothpick inserted into the middle comes out clean. You just can’t believe how heavenly this smells while it’s baking.
Cool in the pan on a wire rack.
Whisk together the powdered sugar, maple syrup, and milk until smooth. Drizzle it over the cake.
Cut into 12-16 bars.
