Potato soup loaded up with all of your favorites! Bacon, cheese, sour cream, and green onions. Just like a loaded baked potato in a warm bowl of comfort.
The potatoes bake in the microwave while you put together the rest of the ingredients making this a fast, easy soup.

The leaves are just starting to turn and my attention has turned to comfort foods. One of my favorites is a hot, steamy bowl of soup. (You can find a collection of all of my soups here).
This potato soup is sooo satisfying; creamy, cheesy with pieces of bacon and green onion and a little sour cream swirled in.
For this potato soup we’ll be baking the potatoes in the microwave. Keep in mind that microwaves can vary quite a bit so you may need to adjust the time a little.
Start by stabbing the potatoes all over with a fork. This allows the steam to release as they bake. I don’t know if they really will explode in the microwave but I seriously don’t want to be cleaning potato shrapnel out of the inside so…just to be safe; 4 or 5 times on each side should do the trick.
Place them on a microwave safe plate in a ring and blast them on high for 6 minutes. Flip them over and nuke for another 6 minutes.
Let them stand in the microwave while you put the rest of the soup together.
While the potatoes are cooking, cut the bacon into 1/2 inch pieces.
In a large dutch oven cook the bacon over medium high heat in a until crispy.
Remove to paper towels. Remove all but about 1/4 cup of the drippings.
In the same pot, melt the butter and bacon fat together.
Then whisk in the flour. Cook for a couple of minutes to get rid of the raw flour taste.
Slowly pour in the chicken stock, whisking as you go.
Stir in the milk, salt and pepper.
Stir constantly until mixture is thickened.
Cut potatoes in half; scoop them out of their skins and into the pot. Break them up as you stir them in or use a potato masher if you don’t like so much texture.
Finally, stir in half of the bacon, the sour cream, 2 cups of the cheese, the onion powder, and 1/2 cup of the green onions.
Top the individual servings with the remaining bacon, cheese, and green onions.
