This time of year I’m always wanting comfort food. I just crave a hot bowlful of soup or stew or some other one pot wonder. Unfortunately, a lot of comfort foods are far from healthy.
This white bean soup, however, is loaded with veggies and fiber-rich cannellini beans. And it really stays with you. You won’t be hungry again in half an hour.
The flavor of this white bean soup is off the charts. Garlic and Italian seasoning and a bit of saltiness from the prosciutto.
This is the prosciutto that I use. But you can use any brand.
Look for it in the deli department of your grocery store. I got this at Walmart, it’s not hard to find. If you have trouble locating it you can substitute about 1/2 cup of cooked ham.
Start by adding the olive oil and prosciutto to a large dutch oven and cook over medium high heat, stirring occasionally, for a couple of minutes.
Then add the veggies and Italian seasoning and cook, stirring constantly, for a couple more minutes.
Next, stir in the chicken broth, water, and bay leaves.
Cook for 10 minutes or until the veggies are tender.
Finally, stir in the beans and fresh basil and cook for about 5 minutes.
Garnish with seasoned croutons and some grated parmesan cheese.
