This lasagna is just the right size for two. Made with turkey italian sausage and no-boil noodles so it’s as easy as it is delicious!
Because sometimes you just don’t want a ton of leftovers to deal with.

Most of the time it’s just hubby and me for supper. Our son is married and lives in another town. Our daughter lives with us but she works and goes to school.
So it’s usually just the two of us. Which is great!
But, we eat every recipe from every blog post. So that means leftovers. So. Many. Leftovers.
That’s why I’m loving this lasagna for two. No leftovers.
Pair it with a nice salad and some italian bread and it’s the perfect meal for two!
These are the noodles that I used. They don’t need to be cooked, just lay them in the pan. I think there may be other brands but this is a brand I know and trust.
Start by spraying a 8×4-inch loaf pan with cooking spray. In medium a bowl, mix together the mozzarella and ricotta cheeses and set it aside.
Heat the olive oil over medium-high heat. Add the sausage, onion, red pepper flakes, and Italian seasoning.
Cook it about 5 minutes or until the sausage is cooked through and the onion softens. Drain it if necessary and return it to the skillet, then stir in the sauce.
Now the assembly. I didn’t take pictures of each step because there would have been too many.
First, spread a 1/2 cup of the sauce mixture in the bottom. This keeps the bottom noodle from sticking.
Next, lay on a lasagna noodle and spread on a 1/2 cup of the cheese mixture. It’s easiest to plop on a few spoonfuls and spread it out.
Then spoon on a 1/2 cup sauce.
And repeat…1 noodle, 1/2 cup cheese, 1/2 cup sauce.
Then a noodle, the rest of the cheese mixture, another noodle, and the rest of the sauce. Finish with the Parmesan cheese.
Cover the loaf pan with foil and bake the lasgna for 20 minutes. Remove the foil and bake another 15-20 minutes or until the noodles are tender. Let it stand for 10 minutes before serving.
This recipe makes 2 generous portions (maybe 3 or 4 normal portions). I like to serve it with a salad and some garlic bread.
