Irish cream, whiskey, coffee-all of the Irish coffee flavors you love in an easy to make, icy granita. A perfect cool, refreshing summer dessert.
Sometimes I like a post-dinner coffee with a little shot of something interesting except in August when it’s 90 degrees and hot coffee doesn’t seem too appealing. Who am I kidding? A nice hot cup of joe is a great after-dinner go-to any time of year. But on those days when something cold and icy it in order, Irish Coffee Granita fits the bill.This Irish Coffee Granita only has four ingredients and is sooo easy to make. My kind of dessert! But it needs time to freeze so plan ahead.
You can adjust all of the ingredients to suit your own personal taste. More or less sugar, more Bailey’s for a slightly creamier flavor, less whiskey. Or you can leave the whiskey out entirely and use all Irish cream if you don’t happen to have a bottle of Jameson sitting around (whatever). I recommend no less than 1/4 cup to no more than 1/2 cup total alcohol or the texture may suffer. And don’t worry, at eight servings, you’re only getting about a tablespoon of booze per serving. Unless you eat the whole thing. I don’t judge.
