I first made this snack mix to take to a 4th of July fireworks party and could not stop nibbling at it!
It’s just one of those snacks that you have to grab a bit here and there as you go by.
While a lot of these types of snack mixes are made in the oven, this one uses your microwave. Which is certainly a bonus this time of year!
This snack mix recipe uses Corn Chex and Cheerios Protein Oats & Honey cereals.
The Corn Chex are gluten free but the Protein Cheerios are not.
However, you can substitute Honey Nut Cheerios, which are gluten free.
I use these honey roasted mixed nuts for this recipe.
If you can’t find them, use honey roasted peanuts.
Put the cereals and the nuts in a really big microwave safe bowl.
I love the granola-like bits in the Protein Cheerios!
Give the cereals and nuts a good stir to get them combined and set them aside.
Next, in a 2 cup microwaveable measuring cup or bowl, add the butter and honey.
Microwave the butter and honey on high or 1-2 minutes, stirring every 30 seconds, until the miture comes to a boil and the butter is melted.
Mine took about 1 1/2 minutes. Keep a close eye on it. Mine almost bubbled over, I don’t even want to think about how gross that would be to clean out of the microwave!
Pour the honey butter mixture over the cereal and nuts. Stir it until it’s evenly coated.
Microwave the snack mix, uncovered on high, for 2-4 minutes, stirring every minute, until the mixture is coated and glazed. Mine took 3 minutes total.
Spread the mixture on sheet pans or large cookie sheets lined with parchment or waxed paper to cool.
Finally, when it’s cool put it in a big bowl and add the M&M’s.
Give it a good stir and just try to stay out of it!.
Store it in an air tight container.
