Healthy breakfast sandwiches with egg whites, turkey sausage, and reduced fat cheese on whole wheat. Make ahead and freeze for a microwaveable breakfast that’s quick and portable.
And they’re not just for breakfast. They make an easy light lunch or dinner, too!

My family loves breakfast sandwiches, they’re considered a staple at our house.
But they can be pretty pricey. And some of them aren’t all that healthy.
Enter these Healthy Make Ahead Breakfast Sandwiches. So much cheaper and a lot easier on the waistline!
I make them 8 at a time and freeze them. Then just pop them in the microwave to reheat (instructions below).
Start by giving the cups a good spray with cooking spray and placing them on sheet pans or rimmed cookie sheets. This makes them easier to get in and out of the oven.
Then measure 1/3 cup egg whites into each cup. I use the liquid egg whites that come in a carton so I don’t have a bunch of leftover yolks to deal with.
Next, divide the turkey sausage crumbles evenly between the cups. It works out to just over a 1/4 cup in each.
These are precooked crumbles and come in a bag. You can find then over by the other breakfast sausage. Make sure you get something that’s precooked, raw sausage won’t work for this recipe.
Bake the eggs until they’re set, about 18-20 minutes. Salt and pepper to taste and let them cool.
When the eggs are cool, put one slice of cheese ( I like this reduced fat colby jack)
on each Sandwich Thin half…
..and top it with an egg.
Put the top on, wrap them in plastic wrap, and put them in a zip top freezer bag. Full disclosure: 3 of these healthy breakfast sandwiches didn’t make it into the freezer.
After reheating, try topping your healthy breakfast sandwich with some avocado, baby spinach, or a few dashes of hot sauce.
FYI, you may want to make a couple of batches, they go quick!
