Crazy-easy and only 4 ingredients; sugar cookie dough, Rolos, pecans, and a drizzle of chocolate. Make some for yourself and some to share with your friends for the holidays.
When things get hectic around the holidays we all need recipes that are quick and easy. This is such a recipe. Embarrassingly simple but oh so tasty.

These crispy-chewy little nuggets are a take-off on those peanut butter cookies that you press a peanut butter cup into (which I totally thought I made up until I saw the Pioneer Woman do it too).
Except we’re doing it with sugar cookie dough and a Rolo caramel candy. And a pecan on top because it wouldn’t be a turtle without a pecan.
Start off by putting mini muffin liners in your mini muffin pan. There are tons of fun holiday liners this time of year but just in case you’re in your jammies here are some cute ones that have Santas on them.
Then, before you do anything else, take a minute to unwrap the Rolos. Trust me, you won’t have time to do it later because they need to be pressed into the cookies while they’re still warm.
Also, you’ll want to pick some nice pecan halves out of the package; save the broken ones for something else.
Next, put a chunk of cookie dough in each mini muffin liner.
Bake for 13-17 minutes or until just lightly browned on top. Immediately press a Rolo upside down in the center. Careful, the pan is really hot at this point.
Let the Rolos sit for a minute until the chocolate and caramel from the Rolo get soft, then press a pecan half on top until some of the chocolate squishes out.
Melt the melting chocolate in a bowl over simmering water. Drizzle about a teaspoon over each cookie.
