Can a banana cake that starts with a cake mix taste incredible? Um…yeah! If it’s super moist with lots of real banana and it’s topped with an easy, creamy homemade vanilla frosting!
This banana cake is super easy and tastes as good as any scratch cake, imho!

This banana cake has been a family favorite since my mother-in-law showed me how to make it years ago.
It’s so delicious and so easy you’ll want to make it again and again!
This recipe starts with some seriously ugly bananas.
You want them to be really, really ripe. I’ve used some even worse than this.
Now, you can mash them with a fork or do like I do, let your mixer do the work.
Just put them in your mixing bowl and turn on your mixer. I like mine with some texture so I stop when the bananas are still a little chunky.
Then toss in the cake mix, water, eggs (as directed on the mix), and a little baking powder.
The baking powder lightens the cake and helps compensate for the weight of the bananas.
Spray your 9 x 13 inch pan with baking spray. Baking spray has flour mixed in and does a better job of keeping baked goods from sticking.
Pour the batter in the pan. You see some of those yummy banana pieces here.
Bake your cake according to the instructions on the box.
Let it cool completely before you try to frost it.
This frosting has butter in it and it will melt if the cake is even a little warm.
On to the frosting.
I will admit that once in a while I use canned frosting on this cake, but I’m really not a big fan of the flavor and texture.
This vanilla frosting is so easy and it tastes so much better.
Start with a stick of softened butter. I cut it up so that it softens quicker.
Beat it for a couple of minutes until it’s fluffy, then add the milk and vanilla.
Next, start beating in the powdered sugar.
Start with 3 cups and add up to 3/4 cups more until you get a nice spreadable consistency.
If it gets too thick, just add some more milk, 1 teaspoon at a time, until it’s easier to spread.
Then frost your cake. An offset spatula makes it easy.
