One of my favorite things about this time of year is creating goodies that I can share with my friends and neighbors.
This white chocolate fudge is the perfect food gift.
It’s pretty, only 5 ingredients, quick and easy, and most importantly it tastes amazing!
It’s so smooth and creamy, then you get the tart chewiness of the cranberries and the crunch of the pistachios!
If you have lots of people on your food-gifting list just double the recipe and use a 9×13 inch pan. If not, stick with an 8×8 or 9×9 inch pan.
But be sure to line your pan or this stuff is never coming out. I prefer parchment but waxed paper works too. Leave an extra couple of inches hanging over the side so you can lift the fudge out of the pan later.
Start by melting the chocolate with the sweetened condensed milk over low heat, stirring constantly, until they’re completely combined and smooth.
This can take several minutes but don’t try to rush it by raising the heat or your fudge could scorch.
When the fudge is melted and smooth, remove it from the heat and stir in half of the cranberries, half of the pistachios, and the vanilla.
Spread the mixture in your prepared pan and smooth out the top. Then top it with the remaining cranberries and pistachios.
Lightly press them into the top so they don’t fall of when the fudge sets.
Pop the fudge into the fridge for a couple of hours to set.
Using the parchment, lift the fudge out of the pan onto a cutting board.
Cut it with a sharp knife into 8 rows by 8 rows to get 64 pieces.
Serve it as is or put the pieces in holiday candy or mini muffin papers.
