Not your average brownies! With these triple decker brownies you get a chocolate chip cookie, a mint Oreo, a minty fudge brownie, and mint M&M’s in every bite! A truely decadent dessert!
Perfect for St. Patrick’s Day and easier than you may think!

So this is what happens when a food blogger thinks about St. Patrick’s Day while munching on a triple decker brownie leftover from a potluck.
Here is our motley crew of ingredients.
Plus you’ll need eggs, oil, and water for the bownie mix.
I’ve added a touch of mint to the brownie layer but just a touch, I don’t want brownies that taste like toothpaste.
I thought the mint M&M’s would be more of a seasonal thing but there they were on the candy aisle, bottom shelf.
Start by spraying the bottom of a 9 x 13 inch baking pan with baking spray. Be sure to use baking spray and not cooking spray, baking spray has flour in it and works much better for cakes, cookies, brownies, etc.
Cut the cookie dough into quarters and lay it in the pan to soften. Just leave it there, it’ll be fine.
While that’s happening, mix up the brownie mix, eggs, oil, water, and mint extract.
After you’re done mixing the brownie batter the cookie dough should be softened enough. Start pressing it into the bottom of the pan. Work it around until it’s pretty even and there aren’t any gaps. If it’s too hard to work, let it soften a couple more minutes.
Fyi, all of those finger dents will get covered by Oreos and brownie batter.
Take the Oreos and press them into the cookie layer. Really push them in so they don’t lift up when you spread the brownie batter.
Pour the brownie batter over the top of everything and gently smooth it out.
Finally, toss on the M&M’s.
Bake for 45-50 minutes or until a toothpick inserted into the middle comes out clean. As you can see, I had to test this one a few times.
Let them cool in the pan completely before you try to cut them.
Then cut them into 4 x 6 rows. And watch peoples faces light up when they discover “Hey! There’s an Oreo in there!”.
