This salad dressing was first created for my Southwestern Chicken Dinner Salad With Chipotle Lime Ranch Dressing recipe.
I love this dressing so much that I decided to feature it by itself.
And I decided to lighten it up a bit by using some lower fat ingredients.
Light sour cream replaces the full fat version and the full fat mayo has been replaced with a low fat version that’s made with olive oil.
It’s not too often that I make salad dressing from scratch because, quite honestly, I get a little lazy.
But this dressing is so quick and easy and it tastes so much better than store-bought!
Here are all of the ingredients you’ll need.
This Microplane makes short work of zesting the lime.
And this citrus squeezer is one of my favorite tools. It gets every drop of juice out of the lime (or lemon or orange) with very little effort.
I use 2 chipotle peppers because I really like the dressing spicy, but you can certainly start with one if you like.
Just throw all the ingredients in your food processor or blender…
…and process until it’s smooth and creamy.
Taste it and adjust the spice if you like with an extra chipotle or an extra dash or 2 of hot sauce.
This Chipotle Lime Ranch Dressing is pretty thick which is great if you’re using it for a dip.
If you like it a little thinner, just add some milk, a tablespoon at a time, until it’s the consistency you like.
