Chili Mac and Cheese, for when you can’t decide which you want it’s the best of both worlds. A bowl full of cheesy chili macaroni deliciousness.
An easy one-pot meal. FYI, it’s perfect for game-day, too!

Yay! It’s September! Fall is finally here! Unofficially. My favorite time of year.
With cooler temps come comfort food. And what could be more comforting than a chili/mac and cheese mashup?!
Honestly, any dish that features cheese is a hit in my book.
Start by cooking the macaroni according to the instructions on the box. Drain it and set it aside.
Next, add the oil to a large dutch oven and cook ground beef and onions over medium-high heat until beef is no longer pink, about 5 minutes.
Drain it and return it to the pan.
Add the tomato, water, chili powder, cumin, 1 teaspoon of the salt, and garlic powder.
Bring it to a boil. Reduce heat to medium and cook, stirring occasionally, until thickened, about 10 minutes. Remove it from the pan and set it aside.
In the same pan over medium heat, melt the butter. Add the flour and whisk it constantly for 1 minute.
Gradually whisk in the milk, the remaining salt, and the pepper. Bring to a boil, whisking constantly. Reduce heat to medium and cook for 2 minutes.
Remove from heat, stir in cheese until melted.
Stir in beef mixture and macaroni.
Top with green onion, additional cheese, and corn chips.
