Juicy brats browned on the grill and soaked in a hot tub of apple ale and onions. Perfect for summer parties and easy to make-ahead.
You can cook up as many of these flavorful brats as you like and keep them warm and juicy until time to serve.

It’s grilling season!!! Actually, it’s been grilling season at our house for a couple of months. One of my favorite summertime foods is bratwurst a.k.a. brats.
I could cook these outside on the grill. Or I could use my Lodge grill pan, or just pan fry them.
But today I’m using my super awesome 5-in-1 panini press that opens flat to a grill. It easily holds all ten brats that I’m cooking.
Whatever you use, brown your brats for a few minutes on each side over medium high heat. They don’t need to be cooked through, just browned. We’ll finish them off in a bath of apple ale.
Poke them a couple of times with a fork (don’t go crazy) and put them in a large pot. The holes allow some of the fat to render out and it lets the apple ale flavor in.
Next, cut two large onions into big chunks. No need to get fancy, just run a knife through them quick.
Add those to the pot…
…along with three bottles of apple ale and enough water to just cover the brats. Don’t use hard cider, that’s a whole different ballgame.

Cook them uncovered for about 10-15 minutes. You can serve them immediately or leave them on low until you’re ready serve, they’re almost impossible to overcook.
These brats freeze great so go ahead and make a big batch. If you have a big enough pot, throw a few more brats in and add another bottle or two of apple ale.
